Sue's Blackbean Salsa

ingredients

  • 2 cups canned corn drained,(not cream corn)
  • 3 15 ounce cans cooked black beans (rinsed and drained)
  • 1 red bell pepper finely diced
  • 1 red onion finely chopped
  • 1 small can of chopped jalapenos
  • 1 clove of garlic minced
  • 1 bunch of cilantro finely chopped
  • 1 lime (juice of )
  • 1 teaspoon to tablespoon of salt (according to taste)
  • 1/2 tablespoon of fresh ground pepper
  • 5 tablespoons of olive oil
  • 4 tablespoons of red wine vinegar

    1. Mix all of the ingredients together.

    2. Chill covered in the refrigerator for one to twenty hours.

This recipe was submitted by Leah. No doubt this is a college recipe. The directions state, "serves 16 but only lasted eight minutes with eight people."
