Grandma Lotzer's Potato Salad

ingredients

  • 3 pounds of potatoes peeled and quartered
  • 8 eggs
  • 2 bunches of scallions
  • 1 package of frozen peas thawed and drained
  • 2 cups of mayonnaise (may use less)
  • Msg or accent or salt to taste

    1. Boil potatoes until soft (but not mushy) cool and coarsely dice.

    2. Boil eggs,cool and grate into bowl of diced potatoes.

    3. Chop scallions ,including most of the green stem.

  • 4

    4. Add drained green peas and mayonnaise (one cup at a time). The mixture should hold the ingredients together without being “gooey” with mayonnaise.(Light mayonnaise may be used)

    5. Add seasoning to taste.

    6. Make the salad the day before you serve it always best one to two days after the ingredients are knit together. Store in refrigerator covered.

This recipe originated on the farm in Alberta by Annie Lotzer. Most people think they have the best recipe for potato salad. But you must try this one. It is sensational!!
