Brunch Casserole
ingredients
- 12 eggs, beaten
- 1 pkg frozen hash brown potatoes
- 2 cups milk
- 2 cups diced ham, bacon or sausage
- 3-4 Slices American cheese
- 1 Tbl minced onion
- 1 tsp salt
- Pepper
- Green or Red Peppers
- 1 stick butter

Preheat oven to 350 degrees.

Melt butter in bottom of 9x13 pan.

Sprinkle 1/2 of potatoes over butter.

Layer ham or meat choice, green peppers, broken up cheese, and sprinkle the remaining potatoes.

Layer more ham, peppers and cheese.

Mix together eggs, milk, minced onion, salt and pepper and pour over entire pan.

Cover and bake for 45 minutes to 1 hour or until set.

Remove foil for the last ten minutes.
