Potato Latkes for Chanukah

ingredients

  • 3 potatoes*, grated in food processor/place in large bowl with ice water (so it does not go brown). Drain potatoes and wrap in dishcloth.
  • 1/2 grated onion
  • 1 beaten egg
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Pinch sugar
  • Black pepper

directions

Pour at least 1-2 inches oil in large fry pan and heat on medium heat.

When ready to start frying, add the rest of ingredients to the grated potatoes.

    Drop mixture by tablespoonful into hot oil. (Turn oven fan on!)

    Fry each latke about 4 minutes, turn as needed. Drain on brown paper.

    Serve with cinnamon and sugar, applesauce and sour cream. Serve immediately.

    Treble this recipe for large crowd.

(18 potatoes times 3x on all other ingredients, serves about 14 adults)
