Curried Butternut Soup

One of Sammy’s all time favorite things to eat.

ingredients

  • 3 lbs cut up butternut
  • 1 large onion, chopped (by hand) – do not use food processor – it changes the texture of the onion
  • 1 Fuji apple, chopped
  • 2 teaspoons curry powder
  • 6 (or more) cups parave chicken stock
  • Salt
  • Black pepper
  • Oil

    Sauté onion and curry powder in medium hot oil until soft and slightly golden about 10 minutes.

    Add squash and apple; stir to cover.

  • 3

    Make paste of chicken stock powder with a little hot water. Add 6 cups cold water.

    Add stock to vegetables. Bring to boiling.

  • 5

    Cover and simmer for about 30 minutes until veges are soft. Turn heat off. Puree with blender in pot.

    Add salt and pepper to taste. Can add mocha mix (optional).
