Curried Butternut Soup
One of Sammy’s all time favorite things to eat.
ingredients
- 3 lbs cut up butternut
- 1 large onion, chopped (by hand) – do not use food processor – it changes the texture of the onion
- 1 Fuji apple, chopped
- 2 teaspoons curry powder
- 6 (or more) cups parave chicken stock
- Salt
- Black pepper
- Oil

Sauté onion and curry powder in medium hot oil until soft and slightly golden about 10 minutes.

Add squash and apple; stir to cover.

Make paste of chicken stock powder with a little hot water. Add 6 cups cold water.

Add stock to vegetables. Bring to boiling.

Cover and simmer for about 30 minutes until veges are soft. Turn heat off. Puree with blender in pot.

Add salt and pepper to taste. Can add mocha mix (optional).
