ingredients

  • 1 (32 oz) can whole tomatoes, drained
  • 1 c. fresh basil leaves, washed and spun dry
  • 4 tbsp olive oil
  • 6 cloves garlic, peeled
  • salt and pepper
  • 2 large french baguettes, sliced 1 in thick (36 slices)
  • 1 1/2 lb. fresh mozzarella cheese, sliced 1/4 in thick

    Preheat oven 375’

    In food processor, add tomatoes, 1 c. basil leaves, olive oil and 2 cloves of garlic. pulse until smooth, but somewhat chunky. season with S&P. line up bread on baking sheet. toast in oven for about 3 minutes. working quickly, rub remaining garlic on toasted side with piece of cheese on top. place in oven for 45 seconds until cheese melted slightly. remove, spread 1 tbsp tomato mixture on each piece. garnish with basil leaves.
