Zuchinni Bread
This recipe is from our neighbor. It’s loaded with oil and sugar, but it’s offset with a vegetable that’s abundant in August. Freezes well, so eat one and save one for unexpected company.
ingredients
- 3 eggs
- 2 c.sugar
- 1 c. oil
- 1 tsp. vanilla
- 2 c. grated zuchinni, peeled
- 2 c. flour
- 2 tsp. baking soda
- 1/4 tsp. baking powder
- 1 Tbl. cinnamon
- 1 tsp. salt
- 1 c. walnuts
- 1/2 c. raisins

Beat 3 eggs until foamy.

Add sugar, oil & vanilla

Beat until thick. Stir in coarsely grated zuchinni (peeled).

Sift flour, baking soda, baking powder,cinnamon & salt.

Stir dry ingredients together into previous mixture. Fold in nuts & raisins. Bake in 2 greased loaf pans @ 325 degrees, 50 minutes (1 hour for glass pans).
