Crazy Chocolate Cake
ingredients
- 1 1/2 C flour
- 1 C sugar
- 3 T. cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 6 T. vegetable oil
- 1 T. vinegar
- 1 tsp vanilla
- 1 C cold water
- 1/2 C cocoa -- unsweetened
- 1/4 C butter
- 1/4 C milk
- 1 C sugar
- 1/4 tsp salt
- 1 tsp vanilla
directions
Cake: Sift flour, sugar, cocoa, soda and salt into 9-inch cake pan. Make 3 dents in dry ingredients. Place oil in 1 dent, vinegar in another and vanilla in third dent. Cover with cold water; stir with fork until mixed. Do not beat, but be sure all of dry ingredients are mixed in. Bake at 350° for 25 to 30 minutes.
Minute Fudge Icing: Combine ingredients in saucepan over medium high heat, stirring constantly. Bring to a boil; boil for 1 1/2 minutes, stirring constantly. Remove from heat; beat until cool. Add vanilla; continue beating until of spreading consistency. Be careful not to beat it too long!
