Potato Pancakes (latkes)
This is tasty served with apple sauce or sour cream and chives.
ingredients
- 4 large potatoes
- 1 egg
- 1 t kosher salt
- dash pepper
- 1 T flour
- 2 t grated onion
- 1/2 t baking powder

Peel and grate 4 large potatoes. Squeeze and drain off liquid.

Add rest of ingredients. Mix well. Drop by tablespoon into a well oiled skillet (475 on electric skillet)

Brown well on both sides.

Drain on paper towel.

Can be frozen by placing pancakes between layers of foil. When ready to serve reheat uncovered 450 oven till crispy.
