Okra, Corn & Tomatoes
A quick and easy dish that’s perfect for a weeknight meal. This dish can be served over rice or eaten by itself.
ingredients
- 3 T oil
- 1 medium onion, chopped
- 1 small green bell pepper, chopped
- 2 cloves of garlic, minced
- 1 14.5 oz. can petite cut diced tomatoes
- 1 cup frozen corn
- 1 bag of frozen chopped okra
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp red cayenne pepper
- 1 tsp sugar
- 1 small can of tomato sauce
directions
In a large skillet, heat oil over medium heat. Add onions, bell pepper, and garlic. Cook until onions are wilted and translucent. Add corn and diced tomatoes and cook for 15 minutes. Add Okra and remaining seasonings. Pour can of tomato sauce and let simmer for 15-20 minutes or until okra is tender. Serve over steamed rice.

Optional: Adding shrimp to this recipe makes a perfect one dish meal.
