Dumplings, Peach

Snoble family recipe; compliments of Nancy Snoble-Mitchell. Easy summer meal. Because dumplings are filling they are usually served alone.

  • 1 - 8 oz. carton Small Curd Cottage Cheese

  • 2 Eggs

  • 2 Cups Flour

  • 1 tsp Baking Powder

  • Mix cheese and eggs. Add flour and baking powder. Mix well. Turn dough out onto floured board and knead until the consistency of pie dough. If necessary add more flour until dough is no longer sticky.

  • Roll dough out to ⅛ - ¼ inch thick rectangle. Cut dough into squares to fit peaches or other fruit. Wrap dough squares around peaches, being careful to seal completely.

  • In large kettle, bring water to a boil. Drop dumplings into boiling water a few at a time; don’t crowd pan. Continue boiling 10-15 minutes. Remove with slotted spoon.

  • Serve with melted butter and cinammon sugar.

notes:

Plums, nectarines or handfuls of whole berries can be used in place of peaches. DO NOT use cut-up fruit as this will not work well.
