Your daddy’s mom used to serve this every Christmas Eve. Pretty sure this is as close as I’m going to get to her recipe. If you like it thicker, use a bit more flour and butter, or you could even add some potatoes. Good with some crusty bread, or crackers.

ingredients

  • 4 tablespoons (1/2 stick) plus 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup chopped onions
  • 1/2 cup chopped celery
  • 2 cups milk
  • 2 dozen oysters, shucked, drained and reserve liquid (who am I kidding, use canned ;) )
  • Salt and cayenne (cayenne optional)
  • Fresh black pepper
  • 1 tablespoon chopped garlic
  • 1/4 cup chopped finely chopped parsley
