Pesto Cheesy Chicken
ingredients
- 4 skinless, boneless chicken breast halves (pounded to 1/4" thickness)
- 1 cup basil pesto
- 4 thick slices mozarella
- Basil Pesto:
- 2 c fresh basil
- 1/2 c grated parmesan
- 1/2 c olive oil
- 3 garlic cloves, minced
- salt and pepper

Preheat oven to 350°. Spread 2-3 Tablespoons of pesto onto each flattened chicken breast. Place one slice of cheese over pesto. Roll up tightly and secure with a toothpick.

Place in a lightly greased baking dish.

Bake uncovered for 45-50 minutes until browned and juices are clear.
