Pesto Cheesy Chicken

ingredients

  • 4 skinless, boneless chicken breast halves (pounded to 1/4" thickness)
  • 1 cup basil pesto
  • 4 thick slices mozarella
  • Basil Pesto:
  • 2 c fresh basil
  • 1/2 c grated parmesan
  • 1/2 c olive oil
  • 3 garlic cloves, minced
  • salt and pepper

    Preheat oven to 350°. Spread 2-3 Tablespoons of pesto onto each flattened chicken breast. Place one slice of cheese over pesto. Roll up tightly and secure with a toothpick.

    Place in a lightly greased baking dish.

  • 3

    Bake uncovered for 45-50 minutes until browned and juices are clear.
