This is one of our favorite Teenie recipes. Teenie, Ernesine Robinson, learned to cook from her mother, Myrtle Cooper; Addie Patton; and Mary Jane. Most of her recipes are by “heart” and she cooked to “taste”. In order to obtain her recipes, one had to follow her around, watching her add a “pinch of this” and a “sprinkle of that.”

ingredients

  • 3 quarts tomatoes, peeled and chopped
  • 4 green bell peppers, seeded and chopped
  • 2 (or more) hot peppers, seeded and chopped
  • 2 large onions, chopped
  • 1 cup sugar
  • 3 cups apple cider vinegar
  • 3 t salt
  • 1 t whole cloves
  • 1 t whole allspice
  • 1 stick cinnamon

    Tie the spices in a spice bag.

    Combine all ingredients in a large stock pan. Simmer for 2 hours, stirring frequently to prevent sticking.

    Remove the spice bag and ladle the sauce into sterilized jars and process in a hot water bath.

Good on your purple hull or black eyed peas! I also combine it with mayonnaise to make a thousand island dressing.
