BBQ-Kissed Green Lip Mussels
You’ll be surprised. . . These lips may be the sweetest you kiss all summer long!
ingredients
- Mussels
- 2 pounds (1 kg) green lipped mussels (black mussels are a fine substitute)
- 2 whole garlic cloves, minced
- 1 lemon
- sea salt and cracked black pepper
- Dressing
- 1 large tomato, finely diced
- 4 ounces (115 grams) cooked bacon, finely diced
- 1/4 cup (50 mL) red wine
- 2 green onions, chopped
- 2 whole garlic cloves
- 2 tbsp (30 mL) parsley, chopped
- 3 oz (85 grams) butter
- 1 tbsp (15 mL) extra virgin olive oil
- 1 tsp (5 mL) brown sugar
- 1 tsp (5 mL) lemon zest

1:Scrub and wash mussels to clean and remove their “beards.” Discard any mussels that are broken or do not readily open. Dice and prepare dressing vegetables separately.

2:Replace one cooking grate on your grill with your griddle plate and preheat the grill to medium-high heat. Place mussels on the plate and cook 2 - 4 minutes with the cover closed.

3:While mussels cook, heat butter in a small pan and mix in remaining ingredients.

4:Turn off the grill and squeeze lemon juice and dash salt and pepper into open mussels. (Discard any unopened mussels.) Reserve a small bit of salt and pepper, spoon dressing into opened mussels, and lightly dash a second time on top. Serve quickly with warm bread and butter.
