Salmon with Sauteed Spinach

ingredients

  • 2 5-ounce pieces of salmon, skin removed
  • salt and pepper
  • 2 tablespoons dijon mustard (or dijonnaise)
  • 2 cups spinach
  • 1 tablespoon olive oil
  • 1 clove garlic, minced

directions

    Preheat oven to 400 degrees F.

    Heat olive oil and add garlic in small skillet. After 1 minute, add spinach and cook until wilted.

    Divide spinach into 2 piles on lined baking sheet. Place one piece of salmon on each bed of spinach. Salt and pepper liberally. Spread dijon mustard on top of salmon. Bake for 8-10 minutes, until fish flakes easily.
