Greek Spinach Pasta

A mom creation...I am so thankful that she created it!

servings:About 4 servings


  • 4 cups pasta (I use penne)
  • 3 T olive oil
  • 1/2 yellow onion, diced
  • 2 cloves of garlic, minced
  • 12 oz baby spinach
  • 6 oz feta cheese
  • 1/4 c pine nuts, toasted

    Cook the pasta in boiling water until al dente. Drain and set aside.

    In a large pot, saute the onion and garlic in the olive oil. Once the onions are translucent, add the fresh spinach and cook until the spinach is wilted. Toss the spinach mixture with the reserved pasta. Add the feta and pine nuts and toss to combine.
