Mini Peanut Butter and Chocolate Cheesecakes

- Crust:
- 1 C. graham crackers, finely crushed
- 3 T. butter, melted
- 2 T. sugar
- Filling:
- 8 oz. package cream cheese, softened
- 3 oz. package cream cheese, softened
- 1/2 c. sugar
- 1 t. vanilla
- 1/2 c. milk
- 2 eggs
- 1/3 c. peanut butter
- 1/2 c. semisweet chocolate chips, melted & slightly cooled

Preheat oven to 325 and line a 12 count muffin pan with liners. Mix crust ingredients and press firmly into liners, use bottom of cup if needed.

Place cream cheese in a mixing bowl & beat until smooth. Add sugar and vanilla and continue to beat until smooth and fluffy. Add milk then eggs, one at a time. Remove 1/2 of batter to a separate bowl.

Add peanut butter to batter in mixing bowl and mix until blended. Pour evenly into cups. Return reserved mixture to bowl and add melted chocolate. Mix until blended and pour over peanut butter mixture.

Bake at 325 for 20-25 minutes or until almost set. Cool completely on wire racks. Refrigerate.
