Chopped Greek Salad
Serve with Jambalaya or add chilled shrimp or chicken for a meal on it’s own.
ingredients
- 6 C chopped romaine lettuce (2 medium heads)
- 1 C coarsely chopped flat leaf parsley (1/2 bunch)
- 1 diced red pepper
- 1 C diced cucumber
- 1/2 C pitted Kalamata olives
- 1/3 C crumbled fea cheese
- 1/2 C Marzetti Asiago Peppercorn Dressing
- 1 C. Texas Toast Cheese & Garlic Croutons
directions
In a large serving bowl, combine romaine lettuce, parsley, pepper, cucumber, olives, and cheese and toss together. Pour in Marzetti Asiago Peppercorn Dressing and gently toss. Sprinkle the croutons over salad. Serve.
notes
Serve the dressing on the side. Use gorgonzola cheese for a change up.
