French Pancake
This recipe was passed down from Kelsey’s grandmother, Erma Norcross. Kelsey made it a Christmas morning tradition for several years at the Wattunen house. It was delicious!
ingredients
- 1/4 cup butter
- 1 cup milk
- 4 eggs
- 1 cup flour
- 2 tablespoons sugar
- 1/2 teaspoon vanilla
- 1 cup strawberry halves, 1 cup raspberries, 1 cup blueberries, 1 cup blackberries (or any combination of berries to equal 4 cups)
- 3 tablespoons berry flavored liqueur

Combine berries and liqueur in bowl.

Preheat oven to 425 degrees.

Place butter in a 12" cast iron skillet and place in oven until butter melts and skillet is hot.

Combine milk and eggs in a blender and process at high speed. Add flour, sugar, vanilla and process on high until smooth. Quickly pour batter into hot skillet. Bake at 425 degrees for about 20 minutes or until puffed and brown.

To serve at table, place baked pancake on warm plate and cover with berries and sprinkle with powdered sugar and whipped topping. Cut into wedges.

Can use lemon wedges and creme fraiche if desired.
