Japanese Chicken
ingredients
- 2 fryers, cut up or 4 whole chicken breasts
- 1 teaspoon powdered ginger or 2 teaspoons grated ginger root
- Flour
- 4 tablespoons butter
- 1/2 cup water
- 1/4 cup soy sauce
- 1/8 cup brown sugar
- 1 can crushed pineapple, drained

Wash chicken, pat dry with a paper towel and dust with ginger. Rub chicken pieces with flour and brown in butter. Once brown, pour off any excess butter.

In a small bowl combine soy sauce, water and brown sugar. Pour over chicken. Add pineapple and cover. Simmer on low heat about 50 minutes or until chicken is tender. Serve with rice.

Note: Sauce can be used as a gravy for rice if it is doubled. Do not double brown sugar.
