Red Velvet Cupcakes
I am horrible at decorating cakes, which means that I am a huge fan of cupcakes. This recipes lends itself well to cupcakes. Soft and melts in your mouth. Make sure you add the pecans to the icing to make it a true Southern classic!
ingredients
- Cake:
- 2 1/2 c sifted cake flour
- 2 t cocoa powder
- 1 t baking soda
- 1 t baking powder
- 1 t salt
- 1 1/2 c sugar
- 1/2 c unsalted butter, softened
- 2 large eggs
- 1 c buttermilk
- 2 oz red food coloring
- 1 t distilled white vinegar
- 1 t vanilla
- Frosting:
- 8 oz cream cheese, softened
- 1/2 c butter, softened
- 1 lb confectioners sugar
- 1 t vanilla
- 1 c chopped pecans

Can make as a cake. Two 9 in cake pans (greased and floured) will take 20-30 minutes to bake.
