Cinnamon Sweet Bread

ingredients
- Mix well:
- 1 cup vegetable oil
- 2/3 cup milk
- 1 tsp. vanilla
- 3 large eggs
- In another bowl mix:
- 2 1/3 cups flour
- 1 1/3 cups sugar
- 1 1/2 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 large box instant vanilla pudding
- 1 cup chopped walnuts (optional)
directions
Combine all ingredients. Spray 2 regular loaf pans with non-stick spray. Sprinkle with cinnamon. Pour mixture into pans. Makes 2 loaves. Bake at 350 degrees for 1 hour. When toothpick inserted in center comes out clean, bread is done. Do not add more than 7 minutes to baking time or bread will be dry and edges overcooked.

For Apple Cinnamon Bread:

Decrease instant pudding to 1 small box. Decrease oil to 3/4 cup. Add 2 cups of small pieces of apple slices. Granny Smith’s are recommended.

For Peach Cinnamon Bread:

Decrease instant pudding to 1 small box. Decrease oil to 3/4 cup. Add 2 cups of small pieces of sliced peaches. (Do not used canned peaches)

For Banana Bread:

Decrease instant pudding to 1 small box and use banana rather than vanilla. Decrease oil to 3/4 cup. Add mashed ripe bananas. (4 small or 3 large)

For Pumpkin Bread:

Decrease oil to 3/4 cup. Add 1 tsp. ginger & 1/2 tsp. clove. Add one 15 ounce can of pumpkin. Substitute raisins for the walnuts.

If you prefer breads to be less sweet, decrease the sugar in all recipes to 1 cup.
