Marty's Sweet Potato Souffle

ingredients

  • 5 medium sweet potatoes, peeled, cut into small pieces, cooked and whipped
  • 1 cup of sugar
  • 2 eggs beaten
  • 1/2 teaspoon of salt
  • 1 stick butter
  • 1/2 cup evaporated milk
  • 2 teaspoons of vanilla
  • miniature marshmallows and pecans to top (optional)
  • Bourbon to taste (optional)

directions

Peel and cook potatoes until tender. Drain potatoes and whip. If using, add the bourbon first. Mix well into whipped potatoes. Then to that mixture add sugar, eggs, salt, butter, milk and vanilla. Mix well and put in a buttered casserole dish. Bake in a preheated 325 degree oven for 25 minutes. Remove from oven and if desired place marshmallows and pecans on top and return to oven for 5 minutes until marshmallows begin to brown.
