Yucatan Beef with Flour Tortillas
This dish could be cooked in a crockpot, but there is some preparation, including the browning of the beef. It might not be appropriate for a workday, but it would be a great idea for a day off. Turn on your crockpot and shop, garden, clean house, take a nap or whatever. When dinnertime comes, your beef will be ready to serve.
ingredients
- 2 tablespoons olive oil
- 2 medium onions, diced
- 2 pounds lean beef stew meat, cut into large chunks
- Salt and pepper
- 1 tablespoon finely minced garlic
- 1/4 cup beef broth
- 2 chipotle chilies in adobe sauce, finely minced
- 1 teaspoon dried oregano
- 1 7-ounce can mild or medium green salsa
- Guacamole
- Sour cream
- Hot flour tortillas
- Pickled jalapenos

Sprinkle beef chunks with salt and pepper. Heat olive oil in a large Dutch oven over high heat and saute beef chunks until brown. Reduce heat to medium and add onions and garlic. Sweat onions for a few minutes, stirring frequently, until transparent. Stir in remainder of ingredients, bring to a boil and reduce heat to low.

Simmer for 2 hours until beef is tender. Remove beef from pot and shred. Strain liquid in pot and set solids aside to serve with shredded beef. Skim liquid (if desired) and return to pot. Add shredded beef to heat through.

Serve shredded beef, solids from pot, guacamole, sour cream, hot flour tortillas, pickled jalapenos, and more fresh cilantro. Each person can build his or her own rolled tortilla to taste.

As a shortcut, use prepackaged beef stew from the meat department of your grocery store.
