Creamy Carrot Soup
ingredients
- 2 large onions, chopped
- 4 tablespoons butter
- 1 lb carrots, shredded
- 4-6 cups stocks
- 1/2 uncooked
- 4 shallots or green onions, minced
- salt & pepper to taste
- 1/3 cup orange juice
- 1 cup cream, 1/2 & 1/2 or milk
- 1/2 cup sour cream
- nutmeg

1. Saute onions in butter until translucent

2. Add carrots & toss over medium heat until wilted

3. Add chicken stock & bring to boil

4. Add rice, shallots, salt & pepper

5. Simmer 40 minutes

6. Puree & bring back to boil

7. Take it off heat & add oj, cream, sour cream & dust with nutmeg
