Oven Fries with Roasted Garlic
ingredients
- 3 large Yukon gold potatoes halved lengthwise and cut into 1/2 inch thick wedges
- 8 unpeeled garlic cloves
- 3 tbsp extra virgin olive oil (+)
- Kosher salt & freshly ground pepper
- 2 tsp chopped thyme
- 1/4 cup parsley leaves if desired

Preheat oven to 425 F. On large rimmed baking sheet, toss the potatoes and garlic cloves with olive oil (or use zip loc bag).

Spread potatoes in an even layer cut side down. Season with salt & pepper and sprinkle with chopped thyme. Bake for about 30 minutes, or until the potatoes are browned on the bottom and very crisp.

Peel the garlic cloves. Transfer the potatoes and garlic to platter, sprinkle with parsley leaves and serve.
notes
You can use rosemary instead of thyme although Simon & Garfunkle suggest both.
