Mediterranean Chicken Packets

  • 4 Boneless Chicken Breasts
  • 2 tbs Olive Oil
  • 2 tsp Italian Seasoning
  • 1 1/2 tsp Salt
  • 3/4 tsp black pepper
  • 1 (10oz)package frozen chopped Spinach, thawed & squeezed dry
  • 1 cup thinly sliced yellow Onions
  • 1 cup drained & chopped oil packed Sun Dried Tomatoes
  • 1/2 cup Kalamata olives, halved
  • 2 tbs minced garlic
  • 1/2 cup dry White Wine
  • 2 tbs chopped fresh Basil
  • 1/2 tsp fresh Thyme
  • 4 oz Goat or Feta cheese, crumbled

    Prepared a grill or preheat oven 500*

    In a medium bowl combine onions, tomatoes, olives, garlic, wine, basil, thyme, 1/4 tsp salt, 1/4 tsp pepper - stir to combine.

    Prepare 4 sheets heavy duty aluminum foil 12x15 inches. Fold in half to crease, then unfold.

    Divide the spinach among the 4 foils - place in center. Lightly coat both sides of each chicken breast with oil, season with Italian season. Place one chicken on top of spinach. Place tomato mixture on top of chicken and top with 1 oz of cheese. One at a time, fold top of foil over chicken starting in the corner, fold edges tightly, each overlapping the previous one.

    Place on grill or if using oven (place packets on a baking sheet) bake until package puffs, approximately 30 minutes. Remove & cut packets open.
