Easy Chevre Pasta
This is the perfect pasta for any family. It can be customized for each person so everyone is happy. Also it is good warm or cold the next day for a picnic or lunch box.
ingredients
- 1 lb. Penne pasta (or your favorite)
- 5 oz. Chevre cheese
- Any of the following:
- Steamed asparagus chopped into 2 inch pieces
- Sliced green or black olives
- Chopped roasted red peppers in 1/2 inch pieces
- Chopped sun-dried tomatoes in 1/2 inch pieces
- Halved cherry tomatoes
- Lightly steamed broccoli

Boil 6 cups of water and cook pasta according to directions until al dente. Drain pasta (do not rinse - you don’t want to cool the pasta at all).

While pasta is cooking prep the ingredients you have chosen. These can be placed in individual bowls on the table if you want everyone to customize their pasta.

After the pasta is drained pour into a large bowl and immediately chop chunks of chevre into the pasta and mix. The chevre will melt and coat all of the pasta.

Either mix in all ingredients or bring the pasta to the table and everyone can select the things they like to put into their bowl.
