Coconut Curry Chicken

ingredients
- 1/2 cup Flour
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 12 skinless Chicken Thighs
- 1 tbsp oil
- 2 Onions chopped
- 4 cloves Garlic minced
- 1 tbsp curry powder or 2 tbsp paste
- 1/2 cup Chicken Stock
- 1 can 14 oz Coconut Milk
- 4 Carrots sliced
- 1 19oz can Chickpeas
- 1 cup Peas or snow peas
- 1 Granny smith apple peeled & cut in 1 in chunks
- 1 cup Plain Yogurt
- 1/2 cup Cashews
- 1/4 cup toasted shredded Coconut

Combine flour, salt and pepper to coat chicken.

Put chicken in bottom of cooker.

In a skillet heat oil over med heat.

Add onions, garlic and curry powder and cook for 3 min.

Sprinkle with flour and cook 1 min.

Stir in stock and coconut milk, bring to boil.

Add carrots and chickpeas.

Pour over chicken.

Cover and cook on low 7 hours until cooked.

Stir in peas, apple and yogurt.

Cook high 20 min before serving w cashews and coconut.
