ingredients

  • 1/2 cup Flour
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 12 skinless Chicken Thighs
  • 1 tbsp oil
  • 2 Onions chopped
  • 4 cloves Garlic minced
  • 1 tbsp curry powder or 2 tbsp paste
  • 1/2 cup Chicken Stock
  • 1 can 14 oz Coconut Milk
  • 4 Carrots sliced
  • 1 19oz can Chickpeas
  • 1 cup Peas or snow peas
  • 1 Granny smith apple peeled & cut in 1 in chunks
  • 1 cup Plain Yogurt
  • 1/2 cup Cashews
  • 1/4 cup toasted shredded Coconut

  • 1

    Combine flour, salt and pepper to coat chicken.

    Put chicken in bottom of cooker.

  • 3

    In a skillet heat oil over med heat.

  • 4

    Add onions, garlic and curry powder and cook for 3 min.

  • 5

    Sprinkle with flour and cook 1 min.

  • 6

    Stir in stock and coconut milk, bring to boil.

    Add carrots and chickpeas.

  • 8

    Pour over chicken.

  • 9

    Cover and cook on low 7 hours until cooked.

  • 10

    Stir in peas, apple and yogurt.

  • 11

    Cook high 20 min before serving w cashews and coconut.
