Apple and Onion Stuffing Muffins

These are great for the holidays and since they are already portioned out, they are easy to serve. And since there is no meat, this makes the perfect stuffing for the Armstrong family.
ingredients
- 2 T olive oil
- 1/2 c butter, softened
- 1 fresh bay leaf
- 4 ribs celery, chopped
- 1 medium onion, chopped
- 3 McIntosh apples, chopped
- salt and pepper to taste
- 2 T poultry seasoning
- 1/4 c fresh chopped parsley
- 8 c stuffing mix
- 2-3 c vegetable stock
