Butterscotch Brownies

  • 1/4 cup butter
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup flour (sifted)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 to 1 cup chopped nuts, OR
  • 3/4 cup grated coconut

Melt butter in saucepan. Stir in brown sugar until dissolved. Cook slightly. Beat in egg and vanilla well. Set aside. Sift flour, baking powder, and salt. Stir into butter mixture. Add nuts or coconut. Pour into a greased 8x8 pan. Bake at 350 degrees for 20 to 25 minutes.
