Stir-fried Thai Noodles with Prawns or Kway Teow Paad Thai
This dish may also be prepared with meat or seafood instead of prawns. Simply substitute prawns with 1 pound mixed seafood, chicken, pork or beef.
ingredients
- 4 tbsp vegetable oil
- 4 shallots, chopped
- 4 eggs
- 1 lb medium prawns
- 7 oz rice noodles, softened in water
- 2 tbsp tamarind pulp dissolved in 1/2 cup water, strained
- 4 tbsp sugar
- 4 tbsp Thai fish sauce
- 2 tbsp oyster sauce
- 2 tbsp light soy sauce
- 1 tsp ground black pepper
- 3 cups beansprouts
- /3 cup chives, or spring onions (scallions), cut int 1 inch lengths
- 4 tbsp ground roasted peanuts
- 2 kaffir lime leaves, shredded

Preheat the oil in the pan or a wok, add the shallots and egg. Stir until cooked, then add prawns, stir well.

Add the rice noodles, cook until soft and start to add the seasoning (tamarind juice, sugar, fish sauce, oyster sauce, soy sauce and the ground pepper), and taste.

Add the bean sprouts, chives, ground peanuts, and serve ho.

When presenting this dish, it is nice to serve it with fresh beansprouts, chives and condiments (sugar, chilli, fish sauce, slices of lime) on the side.
