Mediterranean Kebabs
A quick and easy light meal on the grill.
ingredients
- 1/2 cup lemon juice
- 4 tablespoons fresh chopped or 4 teaspoons dried oregano
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 pounds skinless, boneless chicken breast, cut into strips
- 1 whole green zucchini, sliced in 1/2 slices
- 1 whole yellow zucchini, sliced in 1/2 slices
- 10-15 whole button or baby bella mushrooms
- 10-15 garlic cloves, peeled

Combine first 5 ingredients in a small bowl. Pour half into a zip-top plastic bag, add chicken; Pour other half into a zip-top plastic bag, add vegetables. Seal both and shake well. Marinate in refrigerator 20 minutes. Remove chicken mixture from bag; discard marinade.

Prepare grill.

Cook garlic cloves in boiling water 3 minutes; drain and cool.

Thread chicken, garlic cloves, zucchini slices and mushrooms onto each of 6 (12-inch) skewers. (I recommend vegetables and chicken on separate skewers for grilling purposes.) Place kebabs on grill rack coated with cooking spray. Cook 8-10 minutes, turning once, or until chicken and vegetables are done.
