Peanut Butter Oatmeal Bars

ingredients

  • 1/2 cup shortening
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup peanut butter
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1/4 cup milk
  • 1 cup sifted all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup quick-cooking rolled oats
  • Sugar glaze and chocolate glaze (recipes follow)

    Cream together shortening, granulated sugar, brown sugar, peanut butter, and the first 1/2 teaspoon of vanilla until fluffy. Add the egg and milk; beat well. Sift together flour, baking soda, and salt; add to creamed mixture. Beat just until well combined. Stir in rolled oats. Spread evenly in greased 13 x 9 x 2 inch baking pan. Bake in 350 degree oven for 20 minutes. Cool thoroughly.

    Chocolate Glaze:

    Sift together 2 cups confectioners’ sugar and 1/4 cup cocoa powder. Quickly stir in 3 tablespoons melted butter or margarine, 2-3 tablespoons boiling water, and 1/2 teaspoon vanilla; beat until smooth. Spread quickly and evenly over cooled cookies in pan.

    Sugar Glaze:

    Heat and stir 2 tablespoons butter until golden brown. Stir in 1 cup confectioners’ sugar and 3-4 teaspoons milk. Drizzle over frosting. Cut in bars.
