Farmers Market Mardis Gras Salad
My father created and prepared this special salad for our family in honor of Mardis Gras. It will forever be one of my favorite salads.
ingredients
- Ingredients:
- 4 Bunches of Farm Fresh Spinach
- 1 Bunch of Whole Red Beets
- 1 Bunch of Golden Beets
- 1 Yellow Bell Pepper
- 1 Container of Crumbled Feta Cheese
- Dressing:
- 1/2 Cup Extra Virgin Olive Oil
- 1/4 Cup Aged Balsamic Vinegar
- 1 Tsp. Finely Minced Garlic
directions
Preheat oven to 375 degrees. Line sheet pan with parchment paper. Rinse and trim beet tops. Place beets on lined sheet pan. Roast until fork tender (30 minutes). Meanwhile, prepare dressing by mixing all ingredients and set aside. Next, slice yellow bell peppers into thin strips. While beets cool, arrange spinach, yellow pepper strips on salad plates. Remove/peel beet skins and slice into 1/2 inch wide strips. Add to salad. Top salad with feta cheese and toss with prepared dressing.
