Cinnamon-Frosted Raisin Bars

Cookie Dough
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 cup water
  • 2 cups raisins
  • 1/2 cup butter or margarine
  • 1 cup brown sugar
  • 1 1/2 cups sifted flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups quick-cooking oatmeal
  • 1 tablespoon water

    Mix the sugar and cornstarch in a saucepan. Add the water and raisins and cook over medium heat until sauce is thick and clear; set aside. Cream together butter and brown sugar. Sift together the flour, soda and salt; add to the butter mixture along with the oats, mix until crumbly. Firmly press half of mixture into a 9 x 13 pan. Top with raisin mixture. Stir 1 T. water into remaining half of crumb mixture and spoon onto the filling; spread smooth. Bake at 350 degrees for 35 minutes. Cut into bars while still warm.

    Cinnamon Icing:

    Mix together 1 c. powdered sugar, 1/4 t. cinnamon, and approximately 1 T. milk and drizzle over warm bars.
