Peanut Butter Chip Bars

  • 1/4 cup butter or margarine
  • 1/4 cup shortening
  • 1/2 cup powdered sugar
  • 2 eggs, separated
  • 1 cup flour
  • 1/2 cup apricot preserves
  • 1/2 cup strawberry preserves
  • 2 cup peanut butter chips
  • 1/4 cup sugar


Heat oven to 350 degrees. Beat together the butter, shortening, powdered sugar and egg yolks until blended. Stir the flour into the butter mixture. Press the mixture into an ungreased 13 x 9 inch pan Bake 10 minutes. Stir together the preserves and spread over the baked crust. Sprinkle with 1/2 cup chips. Beat the egg whites until frothy. Gradually beat in the sugar until stiff peaks form. Fold in 1/2 cup chips. Carefully spread this mixture over the preserves. Bake 15-20 minutes or until light brown. Remove from oven and sprinkle with the remaining chips. Cool completely and cut into bars.
