Warm Mushroom Salad
ingredients
- RASPBERRY DRESSING
- 1 tsp. grated orange rind
- 1/2 tsp. ground ginger
- 1/2 cup olive oil
- 2 tbsp. orange juice
- 1 1/2 tbsp. raspberry vinegar
- 1 tsp. honey
- 1/2 tsp. Dijon mustard
- 1/2 tsp. salt
- 1/2 tsp. dried dill
- 1/2 tsp. deried terragon
- Fresh ground pepper
- 2 small red onions, thinly sliced
- 3/4 lb. mushrooms, thickly sliced
- 1 head Boston lettuce, torn into bite size pieces
- 1/2 cup watercress leaves
- 1-2 tsp. raspberry vinegar

Combine dressing ingredients and mix well

Heat half the dressing in a skillet

Add onions and cook until very soft, stirring occasionally, about 5 minutes

Add mushrooms and stir about 2 minutes. Remove from heat.

Add half remaining dressing and 1 teaspoon raspberry vinegar to greens and toss gently

Top with mushroom mixture

Serve remaining dressing at the table
