Chipotle Dip

From the Kitchen of Chef Hart


  • 2-4 chipotle peppers, to desired heat
  • 1 tablespoon fresh cilantro
  • 1 clove garlic
  • 2 green onions
  • Juice from half a lime
  • 1/2 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream


Soak peppers with boiling water for 30 minutes and drain. Discard stems and seeds of peppers (leave in seeds for hotter dip). Puree peppers, garlic, green onions (bulbs only), cilantro, cumin, paprika, and lime juice together in a food processor. Add sour cream and mix well. Put in a serving bowl and whisk in mayonnaise.
