This is a lovely delicately flavoured carmelized onion cheese tart.

ingredients

  • Pastry
  • 6 oz flour
  • 2oz parmesan cheese
  • 1/2 tsp mustard powder
  • cayenne pepper to taste
  • 3 oz frozen butter
  • 1 large beaten egg
  • 2 tbsp cold water
  • Filling
  • 3 tbsp butter
  • 2 sweet onions
  • 2 red onions
  • 2 shallots
  • balsamic vinegar
  • brown sugar
  • olive oil
  • 1/4 cup heavy cream
  • 1 large egg
  • 4 oz Goat cheese or Blue cheese

    Mix flour, parmesan, mustard powder and cayenne in medium bowl. Grate butter into mixture and gently mix in approx 2 tbsp cold water and bring together into ball. Chill 20 minutes.

    Pre-heat oven to 350. Roll out dough to fit a 9-10 inch tart pan. Brush with egg and prick base with fork. Bake until just cooked. Approx. 15 - 20 minutes.

    In large frying pay melt 3 tbsp butter and gently cook sweet onions with fresh thyme until carmelized. Arrange red onions and shallots on cookie sheet, drizzle with olive oil, brown sugar and balsamic vinegar. Cook in 350 oven until soft and light in colour.

    Mix together heavy cream, egg, salt and pepper.

    Top pastry crust with onions. Sprinkle with goat or blue cheese and add cream mixture.

    Bake in 350 oven for 20 - 30 minutes until set.
