Glazed Apricot Duck/Cornish Game hen
Can use this with Cornish game hens also
ingredients
- 1 c apricot preserves
- 1/4 c light brown sugar
- 2 T. brandy
- 2 T Cointreau liqueur
- 4 wild ducks or 1 domesticated
- 1 onion for each duck, peeled
- salt and pepper to taste
- 2 slices of bacon per bird
directions
Hea the first four ingredietns in a small saucepan and cook until combined. Preheat oven to 500°. Place on whole onion in each duck. Sprikle duck with salt and pepper and wrap with two slices of bacon. Roast for 15 to 30 minutes. Baste every five minutes. Remove from oven. Reduce heat to 350°. Pour glaze over the birds and cook for 10 - 15 minutes.

Saoking wild duck in salt water reduces the wild taste.
