Chicken Curry
Monica learned this recipe when she was living in England.
ingredients
- 8 chicken breasts- cut into bite size pcs
- 4 onions, finely chopped
- 4 tomatoes, finely chopped
- 1 cup mushrooms, chopped
- 2 chopped Bell peppers
- 2 tbl oil
- 1/2 can Curry seasoning
- 1/4 tsp cayenne
- 1 tsp paprika
- 2 tbl Mayo
- 1 bottle Mango Chutney
- 5 cups rice
directions
Saute vegetables with oil. Add 1 cup water to start. As water evaporates, add more, up to 1 cup. Do not boil mixture. Add spices and continue stirring. In another skillet, cook chicken until white. Start rice. Add cooked chicken, mayo & chutney to veggie mixture. Let mixture simmer at least 30 minutes, & up to 1 hour. Serve over rice.
