Aztec Salad
A colorful, healthy salad with a little zing!
ingredients
- 1 1/2 C black beans
- 1 1/2 C water
- 2 C frozen corn – thawed
- 2 large tomatoes – diced
- 1 large green pepper – diced
- 1 large red or yellow pepper – diced
- 1/2 jalapeno pepper – seeded and finely chopped or
- 1/2 tsp crushed red pepper
- 1 red onion – chopped
- 3/4 C chopped, fresh cilantro
- Dressing:
- 2 T olive oil
- Juice of one lime or lemon
- 2 T vinegar
- 2 cloves garlic – minced
- 1/2-1 tsp salt
- 2 tsp cumin
- 1 tsp coriander

Wash beans, then combine with water and simmer until tender, 2-3 hours. Drain and cool.

In large bowl, combine beans, corn, tomatoes, peppers, onion and cilantro.

Whisk together remaining ingredients and pour over salad. Toss gently to mix.
notes
You can substitute canned black beans in this recipe.
