Samosa
deep fried potatoe filled dumplings
ingredients
- Dough:
- 4 white cups all purpose flour
- 2 spoon salt (i.e for every 1 cup flour=1/2 tsp salt
- Add to dough:
- 1 white cup buttermilk
- 1 1/2 white cup water
- mix and warm on stove (but don’t boil)
- add 1 1/2 cup olive oil to dough slowly
- add warm buttermilk/water mixture to dough bit by bit slowly
- Filling:
- Boil 12 medium sized potatoes
- Cut potatoes into squares
- Place 2 1/2 large kurchi oil to warm pan
- Add 1 inch square ginger grated to oil
- Add 3 garlic grated (do not need to brown ginger and garlic-will get cooked when fry)
- Add:
- 4 tsp dhuniya
- 1 tsp jeera
- 1/2 tsp paprika
- 3 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp mircha
- Add 1 white cup green pees
- Add 1/2 white cup methi (from freezer)
- Add 1 white cup dhunia (washed and cut)
- Add potatotes (don’t need to cook, since will get cooked when fry)
- Turn stove off

Making samosa:

Take atta into roti sized ball and dip in warm oil (that going to fry in)

Use heavy balle (marble) and thin dough as much as you can

Cut in half circle with knife-so have 2 half circles

Fold each half into a triangle like cone (overlap so no holes)

Fill with potatotes and seal with seal mix

Fry on medium heat
