Broccoli and Bacon Quiche
This makes a great brunch dish.
ingredients
- 1 Pillsbury refrigerated pie crust (15 oz)
- 6 slices bacon
- 4 eggs
- 1 C half and half
- 2 tbsp finely chopped onion
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/8 tsp nutmeg
- 2 C frozen chopped broccoli, thawed and drained
- 3 oz (3/4 c) shredded cheddar cheese
- 3 oz (3/4 c) shredded Monterrey jack cheese

Preheat oven to 350°.

Prepare pie crust as directed into a 9" pie pan.

Cook bacon. Drain on a paper towel. Crumble into the bottom of the crust-lined pan.

Combine eggs, half and half, onion, salt, pepper, nutmeg in a large bowl. Beat well.

Layer broccoli and cheese over bacon. Pour egg mix on top.

Bake 40-50 minutes until knife comes out of the center clean. Cool 5 minutes.
