Sticky Date Cake

  • CAKE

  • 12 oz pitted dates

  • 2 cups water

  • 1 1/2 tsp baking soda

  • 1/3 cup butter

  • 1 cup packed brown sugar

  • 3 eggs

  • 1 1/2 cups all purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp kosher salt

  • BUTTERSCOTCH SAUCE

  • 3/4 cup packed dark brown sugar

  • 1 1/4 cup whipping cream

  • 1/2 cup butter

  • Combine dates and water in a pot and bring to a boil. Remove from heat and add baking soda. Cool for 5 minutes and then puree.

  • Cream butter and sugar with mixer. Beat in eggs one at a time.

  • Combine flour, baking powder and salt. Fold in flour mixture into the batter, alternating with date mixture.

  • Pour into a buttered and parchment lined 9" springform pan. Bake for 60-75 minutes in a 350° oven or until cake tester comes out clean.

  • Prepare sauce while cake is baking. Combine sugar, cream and butter and bring to a boil. Reduce heat and simmer for 5 minutes or until slightly thickened.

  • When cake comes out of the oven, prick holes in the top and drizzle 1/3 of sauce over top and allow to sink in.

  • Cool cake for 10 minutes and invert onto serving plate. Pour remaining sauce over cake when it is served.
