Sticky Date Cake
12 oz pitted dates
2 cups water
1½ tsp baking soda
⅓ cup butter
1 cup packed brown sugar
3 eggs
1½ cups all purpose flour
1½ tsp baking powder
½ tsp kosher salt
BUTTERSCOTCH SAUCE
¾ cup packed dark brown sugar
1¼ cup whipping cream
½ cup butter
Combine dates and water in a pot and bring to a boil. Remove from heat and add baking soda. Cool for 5 minutes and then puree.
Cream butter and sugar with mixer. Beat in eggs one at a time.
Combine flour, baking powder and salt. Fold in flour mixture into the batter, alternating with date mixture.
Pour into a buttered and parchment lined 9" springform pan. Bake for 60-75 minutes in a 350° oven or until cake tester comes out clean.
Prepare sauce while cake is baking. Combine sugar, cream and butter and bring to a boil. Reduce heat and simmer for 5 minutes or until slightly thickened.
When cake comes out of the oven, prick holes in the top and drizzle ⅓ of sauce over top and allow to sink in.
Cool cake for 10 minutes and invert onto serving plate. Pour remaining sauce over cake when it is served.
