Fried Oysters

These were always a favorite of my dad. I always thought he was nuts until I tried them. Now I have to agree with him.

  • 4-8 oz cans refrigerated fresh oysters, drained and patted dry between paper towels

  • flour seasoned with salt and pepper

  • 1 egg beaten and diluted with 1 Tbs water

  • 1 envelope saltine crackers, crushed

  • vegetable oil to deep fry

  • Roll oysters in seasoned flour then in egg and finally in cracker crumbs. May reroll in egg and crackers for heavier coating.

  • Fry in hot (375 degree) vegetable oil, turning once, until golden brown. Drain on absorbent paper.
