Herb Roasted Newlywed Potatoes
Simple and delicious!
ingredients
- 4 pounds red new potatoes, quartered
- 1/4 cup olive oil
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- Salt and fresh ground pepper, to taste

Preheat oven to 400 F.

In a bowl, combine the potatoes, olive oil, rosemary, thyme, salt and pepper and stir to coat potatoes evenly.

Transfer potatoes to a buffet pan and roast until tender, golden brown, and crisp, about 1 hour.
