Makaroon Fingers
These are wonderfully tasty cookies that Sitheo used to make on special occasions. They are filled with walnuts and sugar. Vanessa and Katherine LOVE them!
ingredients
- 2 Sticks butter
- 1 Heaping T Crisco
- 1 C. Sugar
- 2 Egg yolks (3 if small)
- 1 1/3 C. vegetable oil
- 1 C Orange Juice
- 1 t. Vanilla
- 2 T Whiskey
- 7-8 C. Flour (add 7 c. & only 8th cup as needed)
- 1 t Salt
- 3 t Baking Powder
- 1 t Baking Soda
- 1 t Anise
- Filling:
- 1 C Chopped walnuts
- 2 t Cinnamon
- 2 T Sugar
- Syrup:
- 2 C Sugar
- 2 C Water
- Juice of one lemon (add this only after syrup comes off stove)

Creme butter and Crisco until creamy. Add sugar and egg yolks. Add oil and beat slowly, just to blend.

Add OJ, vanilla and whiskey.

Add all dry ingredients.

Pinch of dough size of a walnut. Flatten in hand.

Shape into oval.

Fill with 1/2-1 teaspoon of filling and reshape into finger like shape.

Place on baking sheet and bake at 350° for about 20 minutes or until light brown.

Boil syrup for 20 minutes and add lemon juice just as you remove from the stove. Dip cookies and place on rack.
notes
Bake until light brown. Cookies can be dipped when just out of oven. If they start to break, wait until they cool a bit.
